Spring has sprung! Those of you living in the Northern Hemisphere in cooler, non-tropical climates are probably hoping to thaw out for a bit! Maybe dreaming of getting the garden planted or perhaps getting a little R&R time at the beach, pool, or lake. Here in Costa Rica, though, we have been in HOT summer weather for months! This has me wanting to keep it easy in the kitchen and not heat up the house any more than the summer temperatures are bringing! Crisp, cool, refreshing salads seem to fit the bill for me this time of year. So, this week I am going to share with you all one of our favorite salad dressings– my honey citrus vinaigrette!
This super simple dressing comes together in a flash! I hope you all enjoy it as much as we do!

Let’s talk ingredients for our honey citrus vinaigrette!
To make our salad dressing, you will need the following ingredients:
- extra virgin olive oil
- apple cider vinegar (or black banana vinegar if you can find it)
- fresh lime or orange juice (or try it with lemon!)
- salt & pepper
- dijon mustard
- and of course, HONEY!
What kind of honey do I use in the citrus vinaigrette?
Although we have some Mariola bees who produce this deliciously sweet treat, our primary honey comes from a friend who has quite a few hives in our area!
Lilliam Avila Arias and her family have hives in our little pueblo of La Trinidad and in a few other small nearby towns, and their bees produce a tasty all-natural, pure honey.

And a little vitamin C….
Now, for this recipe we also use citrus. I like to use Mesino limes, as I prefer the tartness that the limes provide to the dressing. However, if you have lemons, I suspect those should work great in this recipe as well, although I have not tried it!
We also like the dressing made with fresh Valencia orange juice. Although, this version is a bit sweeter and less tart.
Try this recipe with your favorite citrus and see which you prefer!
How do I use the honey citrus vinaigrette?
I love to top a pile of cool, crisp greens with this slightly tart, sweet dressing, but it is also delicious substituting orange and using it as a marinade for a fresh beet salad!
How long does it last?
I try to use this dressing within a few days but not after more than a week.
What about the leftover citrus peels?
We love to use our citrus peels in several ways here at Cold River Homestead, but one of the more interesting ways is to dry them and use them as fire starters!
We often have campfires and use the dried peels to help get the fire burning strongly. The dried peels act almost like sparklers on the fourth of July!
Plus they repel mosquitos… AND smell really good when they burn!
Honey Citrus Vinaigrette

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 tablespoon black banana vinegar or apple cider vinegar
- 1 tablespoon honey
- 1/4 cup fresh lime or orange juice (from approximately 1 fruit)
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/8 teaspoon prepared dijon mustard
Instructions
- Combine all ingredients in bowl or bottle and whisk or shake to combine.
- Serve immediately or chill before using.
- Shake before pouring onto salad.
