If you aren’t yet familiar with the one pan egg sandwich sometimes called egg toast, you are missing out! We have our family favorite version we like to call omelet toast. My son and husband in particular LOVE this breakfast egg sandwich! Let me walk you through how I make it! It’s a super tasty and easy way to get your day off to a good start… along with a big ol’ steaming cup of Costa Rican coffee ☕!
What do I need to make omelet toast?
I use homemade Italian bread (here is my favorite recipe), but feel free to substitute store-bought Italian bread or your favorite loaf bread, if that is what you have! I like to use Italian bread because it is the perfect size for my family’s appetite and for my skillet! The texture of the bread works really well for this egg sandwich as well!
You will also need your basic egg seasoning spices (in our case salt, pepper, and ground turmeric), as well as sliced tomatoes, melty cheese, and a kicked up sauce! Todd and I prefer a homemade hot pepper jelly, but Toby loves his with Sriracha sauce! You can substitute your favorite hot sauce!! Or you could use your favorite jam or jelly!
With Todd being a big chile head ??, I sneak in crushed chocolate habañeros into his version also ?! Feel free to adjust to your family’s taste buds and preferences!!!

How do I make my egg sandwich we call omelet toast?
Omelet Toast (Easy One Pan Egg Sandwich)
Notes
(Nutritional information is based on using mozzarella, Sriracha, and Italian bread.)
Ingredients
- 1 teaspoon coconut or preferred cooking oil
- 2 slices Italian bread (or bread of choice)
- 2 large eggs
- dash salt, ground black pepper, and ground turmeric
- 1 teaspoon water
- 1 slice of tomato, cut in half
- 1 tablespoon shredded mozzarella or other melty cheese
- 1 teaspoon (or as desired) Sriracha sauce, hot pepper jelly, or your favorite hot sauce, jam, or jelly
Instructions
- Add oil to your egg skillet and preheat on medium low.
- Crack eggs in a bowl.
- Add salt, pepper, ground turmeric, and water. Whisk eggs until they are uniformly mixed.
- When oil is warm, add eggs to skillet and spread to fill the entire skillet.
- Immediately add bread slices to skillet to coat in egg mixture then immediately flip bread with your fingers and place side by side, leaving about 1 inch space between bread slices.
- Cook eggs until no longer runny and then flip entire omelet (with bread pieces embedded).
- Fold in edges of omelet over bread slices, so that eggs will be fairly well contained within borders of sandwich.
- Add sliced tomato, cheese, and sauce to one side of bread.
- Fold other slice on top.
- Cook each side until lightly browned.
- Move to serving plate and let cool slightly prior to devouring.
